Thermographer's Comments:

Several display coolers showing considerably higher than regulation 4C temperatures on facings of meat and packaged food products. Removing the exterior pkg on ham slices display showed temperatures of 2 - 4 C cooler on second pkg and same reduction in temperature for surface of third package on same peg. (Exterior pkg surface temp 14C, second pkg facing surface temp 10 - 12 C, third pkg surface temp 8 - 10 C.

Infrared Imaging also displayed a cooler which was not operating properly. Management was aware of the problem and a technician was looking into it.

To eliminate hot spots in coolers, we can thermally map them under varying inventory loads to determine maximum cooler efficiency and maximum inventory levels allowable to maintain proper operating temperatures.

All temperatures are in Celsius and list minimum temperature and maximum temperate along a thermal line, thermal area or thermal point.
